WHere is an easy take on a beverage found on our latest cocktail list. Designed as a batch pre-mixed which is loaded with essence of the Christmas time, rendering it excellent for your celebration. Reserve the remaining citrus syrup you can use for breakfast cocktails, puddings, or to mix additional servings of bikinis.
Bikini Recipe
Makes enough for 10 guests
For the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Cocktail (makes 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Method
To prepare the Syrup: Place the listed items inside a saucepan, heat until it reaches a simmer, agitating so the sugar melts. Next, turn off the stove and leave to cool down completely. Pour into a sealable bottle, seal and store in the refrigerator, where it will keep for up to four weeks.
For the Cocktail Base: Pour all the liquids in a sizeable container, leave to sit for 60 minutes, then filter it best through muslin, making it completely strained.
To serve: Add 85ml of your cocktail base to a cocktail shaker packed with ice, and agitate gently for a minute to cool it down. Strain into an cold coupe glass or equivalent, top with a few cranberries and complete it using a quick spritz with the mandarin essence above the glass.
